&amp;#039;&amp;#039;&amp;#039;Wazwan&amp;#039;&amp;#039;&amp;#039; ({{lang-ks|{{uninastaliq|وازٕوان}} }} {{IPA|[waːzɨwaːn]}}) is a multi-course meal in  [[Kashmiri cuisine]], the preparation of which is considered as an art and a point of pride in Kashmiri culture and identity. Almost all the dishes are meat-based using lamb or chicken with few vegetarian dishes. It is popular throughout the  [[Kashmir]]. In the Kashmiri language, &amp;#039;&amp;#039;waz&amp;#039;&amp;#039;  means &amp;#039;cook&amp;#039; or &amp;#039;cooking&amp;#039; and &amp;#039;&amp;#039;wan&amp;#039;&amp;#039; means &amp;#039;shop&amp;#039;. The ultimate formal banquet in Kashmir is the royal wazwan. Of its thirty-six courses, between fifteen and thirty can be preparations of meat, cooked overnight under the supervision of a master chef called a &amp;#039;&amp;#039;wouste waze&amp;#039;&amp;#039;. Guests are seated in groups of four and share the meal out of a large copper plate called the &amp;#039;&amp;#039;traem&amp;#039;&amp;#039;. A ritual washing of hands in a portable basin called the &amp;#039;&amp;#039;Tash-t-naer&amp;#039;&amp;#039;, which is taken around by attendants. Then the traem arrives, heaped with rice, quartered by two [[seekh kabab]]s and contains four pieces of methi maaz, (mutton intestines flavored with a spice mixture containing dried [[fenugreek]] (methi) leaves), two &amp;#039;&amp;#039;tabakh maaz&amp;#039;&amp;#039; (twice-cooked lamb ribs, initially braised with ground spices, then browned in ghee), one &amp;#039;&amp;#039;safed kokur&amp;#039;&amp;#039; (chicken with white  sauce), one &amp;#039;&amp;#039;zafran kokur&amp;#039;&amp;#039; (chicken with saffron sauce), and the first few courses. [[Yogurt]] and [[chutney]] are served separately in small earthen pots. Up to about 20 items are served thereafter by waza (the junior cook).
